Gluten Free Christmas Baking Fun
Last Sunday my friend Joss and I decided to get our bake on. I am a Coeliac and baking successfully can be a little on the tricky side. I have been left disheartened a number of times which puts me off baking really. But I have been getting back into it again over the past few weeks. Fingers crossed the results have been improving thanks to better equipment and a new flour mix we’ve been testing.

We chose to make mince pies and pavlova. We made the meringues first and whilst they were cooking got to work on the mince pies. I have to say they were perfect for making with little ones. A loved cutting out the circles and putting the mince filling inside the pastry cases. It was super simple and they tasted gorgeous. Our first taste Christmas and it was delicious.
We stuffed the pavolva with lashings of cream, kiwi and blackberries. YUM.
I’d really recommend connecting in the kitchen and making something together. We had a super lovely afternoon and are planning to do it again soon. In fact it was such a success the bakes have almost been polished off already. Opps xo Lou
