Pineapple Shrub
1c. diced pineapple
1c. apple cider vinegar
1c. sugar
Put pineapple + vinegar into sealed mason jars and let sit at room temp for 7-10 days, shaking them briefly every day. Strain out the liquid with a potato masher.
